Seasonal

Expect super seasonal dishes, local produce, wild ingredients, and a touch of smoke and
fire.  
We try to make the most of what is in abundance at a particular time of year, to stay in sync with the seasons the dishes will change frequently as ingredients come and go. Sustainable

We are so lucky here in North Yorkshire, with some great producers right on our doorstep, it is important to us to support them, and to encourage a more sustainable, localised food
system.

Foraged

For us foraging is a huge part of that sustainability, using what is naturally given and utilising it when it is plentiful. It provides us with seasonal cues and inspiration for our dishes.

Open Fire

A lot of our cooking is done over open fire, because some things just taste better that way. It allows us to add flavour, gives us a range of cooking techniques to play with and it takes usright back to nature.
